茉莉花茶と同じように、生花の香りを茶葉に移す「窨花」によって生まれる、清らかな花の香り。

茶樹そのものがもつ品種香と、製茶によって引き出される蘭のような香り。

「茶の香りについて」

現在までに、茶葉からは700種類を超える香気成分が確認されている。茶の審評では、乾茶・茶湯・葉底それぞれの香りを観察する。鳳凰単叢の花蜜香、龍井の豆香、ジャスミン茶の花香、老叢水仙の木質香など、茶ごとに個性豊かな香りを持つが、その変化が最も豊かに現れるのは湯を注いだ後である。

熱によって引き出された香気成分は嗅覚を通じて脳へ伝わり、花や果実、蜜などさまざまな香りとして認識される。しかし、その感じ方は人それぞれ異なる。同じお茶であっても、経験や感覚の違いによって受け取る香りの印象は変化する。

香りに決まった正解はない。時間や温度とともに移ろう香りの変化もまた、お茶を味わう楽しみのひとつである。
